Walking Taco Lasagna

Instructions:

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, cook ground beef until browned. Drain excess fat.
  3. Stir in taco seasoning and salsa. Simmer for 2–3 minutes.
  4. Add black beans and corn; stir until well combined. Remove from heat.
  5. Spread a layer of crushed chips in the bottom of the baking dish.
  6. Spoon half of the beef mixture over the chips.
  7. Spread half of the sour cream evenly over the meat, then sprinkle with cheese.
  8. Repeat layers with remaining chips, beef mixture, sour cream, and cheese.
  9. Bake uncovered for 25–30 minutes, or until hot and bubbly.
  10. Let rest 5 minutes before serving.

Serving Ideas

  • Top with shredded lettuce, diced tomatoes, jalapeños, or green onions
  • Serve with extra salsa or guacamole on the side

Storage

  • Refrigerate leftovers in an airtight container for up to 3 days
  • Reheat in the oven or microwave until warmed through
