1. Preheat & Prepare: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
2. Blend the Cottage Cheese (Key Step for Smoothness): For the best texture, add the cottage cheese to a food processor or blender and pulse until it is completely smooth and creamy, resembling thick yogurt. This step ensures you don’t get chunks of curds in your bagels.
3. Mix the Dough: In a large mixing bowl, combine the smooth cottage cheese and the self-rising flour. Stir with a spatula until a shaggy dough forms. It will look dry at first, but keep mixing.
4. Bring It Together: Dust your hands with a little flour and turn the dough out onto a lightly floured surface. Knead gently for 2-3 minutes, just until the dough comes together and is smooth. Don’t over-knead, or the bagels will be tough.
5. Shape the Bagels: Divide the dough into 4 equal portions. Roll each portion into a ball. Use your finger or the floured handle of a wooden spoon to poke a hole in the center of each ball. Gently stretch the hole to about 1-1.5 inches in diameter, shaping it into a classic bagel form.
6. Apply Toppings: Place the shaped bagels on the prepared baking sheet. Brush the tops with the beaten egg wash (this helps the toppings stick and gives a golden shine). Sprinkle generously with your chosen toppings.
7. Bake to Perfection: Bake for 20-25 minutes, or until the bagels are golden brown and sound hollow when tapped on the bottom.
8. Cool & Enjoy: Transfer to a wire rack to cool for at least 10 minutes before slicing. This allows the structure to set.
