Ingredients
Dry Ingredients:
· 2 cups all-purpose flour (or 1 cup all-purpose + 1 cup whole wheat for nuttier flavor)
· ¼ cup granulated sugar
· 4 teaspoons baking powder
· ¼ teaspoon baking soda
· ½ teaspoon salt
Wet Ingredients:
· 1¾ cups buttermilk* (room temperature)
· 2 large eggs (room temperature)
· ¼ cup unsalted butter, melted (plus extra for griddle)
· 2 teaspoons pure vanilla extract
Optional Add-ins:
· ½ cup fresh blueberries
· ½ cup chocolate chips
· 1 mashed ripe banana
· ½ teaspoon cinnamon
No buttermilk? Make your own: Add 1 tablespoon lemon juice or white vinegar to 1¾ cups regular milk, let sit 5-10 minutes until slightly curdled.
