Strawberry Cheesecake Red Velvet Cupcakes

Ingredients

For the Red Velvet Cupcake Batter:

  • 1¼ cups all-purpose flour
  • 2 tablespoons unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup granulated sugar
  • ½ cup vegetable or canola oil
  • 1 large egg, at room temperature
  • 1 tablespoon distilled white vinegar
  • 1 teaspoon pure vanilla extract
  • ½ cup buttermilk, well shaken
  • 1–2 teaspoons red food coloring

For the Strawberry Cheesecake Swirl:

  • 4 oz (½ block) full-fat cream cheese, softened
  • 2 tablespoons granulated sugar
  • 1 large egg yolk
  • ¼ cup finely chopped fresh or frozen strawberries

For the Cream Cheese Frosting:

  • 8 oz (1 block) full-fat cream cheese, softened
  • ½ cup (1 stick) unsalted butter, softened
  • 3 cups powdered sugar, sifted
  • 1 teaspoon pure vanilla extract
  • Pinch of salt

Optional Garnish:

  • Fresh strawberry halves
  • Edible gold sprinkles or red sanding sugar
