For the Red Velvet Cupcake Batter:
- 1¼ cups all-purpose flour
- 2 tablespoons unsweetened cocoa powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ¾ cup granulated sugar
- ½ cup vegetable or canola oil
- 1 large egg, at room temperature
- 1 tablespoon distilled white vinegar
- 1 teaspoon pure vanilla extract
- ½ cup buttermilk, well shaken
- 1–2 teaspoons red food coloring
For the Strawberry Cheesecake Swirl:
- 4 oz (½ block) full-fat cream cheese, softened
- 2 tablespoons granulated sugar
- 1 large egg yolk
- ¼ cup finely chopped fresh or frozen strawberries
For the Cream Cheese Frosting:
- 8 oz (1 block) full-fat cream cheese, softened
- ½ cup (1 stick) unsalted butter, softened
- 3 cups powdered sugar, sifted
- 1 teaspoon pure vanilla extract
- Pinch of salt
Optional Garnish:
- Fresh strawberry halves
- Edible gold sprinkles or red sanding sugar
