1. Prepare your pan
Line an 8×8-inch baking pan with parchment paper or lightly grease it. This will make removing the bars easier.
2. Heat the peanut butter and honey
In a medium saucepan over low heat, combine the peanut butter and honey. Stir constantly until the mixture is smooth and slightly warm. Remove from heat.
3. Add flavor and texture
Stir in the vanilla extract. Then fold in the oats, chocolate chips, and chopped peanuts until everything is evenly coated.
4. Press into pan
Transfer the mixture to your prepared pan. Use a spatula or your hands (lightly greased) to press the mixture firmly and evenly into the pan. The firmer you press, the better the bars will hold together.
5. Chill
Place the pan in the refrigerator for at least 1–2 hours until firm. This sets the bars and makes them easy to slice.
6. Slice and serve
Once set, lift the mixture from the pan using the parchment paper and cut into bars or squares. Store leftovers in an airtight container in the fridge for up to a week.
