My Mom’s Homemade Chimichurri

Ingredients

  • 1 cup fresh parsley, finely chopped

  • 4 garlic cloves (finely chopped or crushed)

  • 2 tablespoons dried oregano

  • 1 teaspoon crushed red pepper flakes (optional, if you want it spicy)

  • ½ teaspoon ground black pepper

  • ½ teaspoon salt

  • ½ cup vinegar

  • ½ cup olive oil

  • 1 small white or red onion, very finely chopped (optional)

  • ½ red bell pepper, finely chopped (optional, for color and texture)
