Step 1: Prepare the Pancake Batter
In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt. In a separate bowl, whisk together the milk, eggs, and melted butter. Gradually pour the wet ingredients into the dry ingredients, stirring until just combined. Be careful not to overmix, as this can result in tough pancakes.
Step 2: Cook the Sausage
Heat a skillet over medium heat and add the breakfast sausage. Cook the sausage until it is browned and cooked through, breaking it up into crumbles as it cooks. Once cooked, remove the sausage from the skillet and drain any excess grease.
Step 3: Assemble the Casserole
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or cooking spray. Pour half of the pancake batter into the prepared baking dish, spreading it evenly. Sprinkle the cooked sausage crumbles over the pancake batter, followed by the shredded cheddar cheese. Pour the remaining pancake batter over the sausage and cheese, ensuring it is evenly distributed.
