Carrot Cake (Square Pan)

1. Prep

  • Preheat oven to 350°F (175°C).

  • Line or grease an 8×8 or 9×9 square baking pan.

2. Make the Batter

  • In a large bowl, beat oil and sugar together.

  • Add eggs one at a time.

  • Stir in vanilla.

  • In another bowl, mix flour, baking soda, baking powder, cinnamon, and salt.

  • Gradually add dry ingredients to wet ingredients.

  • Fold in grated carrots, pineapple (if using), and nuts.

3. Bake

  • Pour batter into prepared pan.

  • Bake for 35–45 minutes, or until a toothpick inserted in the center comes out clean.

  • Let cool completely before frosting.

4. Make Frosting

  • Beat cream cheese and butter until smooth.

  • Gradually add powdered sugar.

  • Mix in vanilla.

  • Spread over cooled cake.

  • Sprinkle with chopped nuts.
