Instructions
1. Prep

Preheat oven to 350°F (175°C).

Line or grease an 8×8 or 9×9 square baking pan.
2. Make the Batter

In a large bowl, beat oil and sugar together.

Add eggs one at a time.

Stir in vanilla.

In another bowl, mix flour, baking soda, baking powder, cinnamon, and salt.

Gradually add dry ingredients to wet ingredients.

Fold in grated carrots, pineapple (if using), and nuts.
3. Bake

Pour batter into prepared pan.

Bake for 35–45 minutes, or until a toothpick inserted in the center comes out clean.

Let cool completely before frosting.
4. Make Frosting

Beat cream cheese and butter until smooth.

Gradually add powdered sugar.
-
Mix in vanilla.

Spread over cooled cake.
-
Sprinkle with chopped nuts.
