Carrot Cake (Square Pan)

Ingredients

For the Cake:

  • 2 cups all-purpose flour

  • 2 cups granulated sugar

  • 1 cup vegetable oil

  • 4 large eggs

  • 2 cups finely grated carrots

  • 1 tsp baking soda

  • 1½ tsp baking powder

  • 1½ tsp ground cinnamon

  • ½ tsp salt

  • 1 tsp vanilla extract

  • 1 cup chopped walnuts or pecans (optional)

  • ½ cup crushed pineapple, drained (optional but adds moisture)

For the Cream Cheese Frosting:

  • 8 oz (225g) cream cheese, softened

  • ½ cup (1 stick) butter, softened

  • 3–4 cups powdered sugar

  • 1 tsp vanilla extract

  • ½ cup chopped nuts (for topping)
