Blackberry Velvet Gothic Cake

🖤 Method & Instructions

Step 1: Prepare the Cake Layers

  1. Preheat oven to 350°F (175°C). Grease and line two 8-inch or 9-inch round pans.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, beat eggs, then mix in oil, buttermilk, and vanilla extract.
  4. Pour wet ingredients into dry ingredients. Stir gently until just combined.
  5. Slowly mix in hot water until the batter becomes smooth and glossy.
  6. Divide evenly between pans.
  7. Bake for 30–35 minutes or until a toothpick inserted comes out clean.
  8. Cool completely before assembling.

Step 2: Make the Blackberry Filling

  1. In a saucepan over medium heat, combine blackberries and sugar.
  2. Cook until berries release juices and soften.
  3. Stir in cornstarch slurry and lemon juice.
  4. Simmer until thick and jam-like.
  5. Cool completely before using.

This filling adds a luxurious tart contrast to the deep chocolate base.

Step 3: Prepare the Whipped Cream Frosting

  1. In a chilled mixing bowl, whip heavy cream.
  2. Add powdered sugar and vanilla.
  3. Beat until stiff peaks form.

Light, airy, and elegant — the perfect gothic “veil” over dark cake layers.
