Step 1: Prepare the Cake Layers
- Preheat oven to 350°F (175°C). Grease and line two 8-inch or 9-inch round pans.
- In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, beat eggs, then mix in oil, buttermilk, and vanilla extract.
- Pour wet ingredients into dry ingredients. Stir gently until just combined.
- Slowly mix in hot water until the batter becomes smooth and glossy.
- Divide evenly between pans.
- Bake for 30–35 minutes or until a toothpick inserted comes out clean.
- Cool completely before assembling.
Step 2: Make the Blackberry Filling
- In a saucepan over medium heat, combine blackberries and sugar.
- Cook until berries release juices and soften.
- Stir in cornstarch slurry and lemon juice.
- Simmer until thick and jam-like.
- Cool completely before using.
This filling adds a luxurious tart contrast to the deep chocolate base.
Step 3: Prepare the Whipped Cream Frosting
- In a chilled mixing bowl, whip heavy cream.
- Add powdered sugar and vanilla.
- Beat until stiff peaks form.
