Banana Bread Cake with Cream Cheese Frosting

DIRECTIONS :

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish and set aside.

  2. In a large bowl, cream together the butter and granulated sugar until light and fluffy.

  3. Add the eggs one at a time, mixing well after each addition. Stir in the sour cream and vanilla extract until fully combined.

  4. In a separate bowl, whisk together the flour, baking soda, and salt.

  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix.

  6. Fold in the mashed bananas until evenly distributed.

  7. Pour the batter into the prepared baking dish and spread evenly.

  8. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean. Allow cake to cool completely before frosting.

Cream Cheese Frosting

  1. In a large bowl, beat the butter and cream cheese together until smooth and creamy.

  2. Add vanilla extract and mix well.

  3. Gradually add powdered sugar, beating until light and fluffy.

  4. Add heavy whipping cream and beat for an additional 1–2 minutes until the frosting is smooth and spreadable.

  5. Spread frosting evenly over the cooled banana cake.
